This is not merely a cooking class; it is a profound celebration of the city’s rich cultural mosaic. Hosted in a warm, elegant home environment with iconic, sweeping views of the Bosphorus, the setting fosters deep connections, cultural exchange, and unforgettable storytelling.
The Host & The Honorable Guests Your culinary guide for the evening is the esteemed Chef Elif Edes. With a rich background deeply rooted in gastronomy and a lifelong dedication to preserving Istanbul’s heritage, Elif is a master at reviving the soulful, cosmopolitan recipes of the city’s past.
Joining you around the kitchen island and the dinner table tonight are three distinguished guests: prominent business leaders representing Istanbul’s Armenian, Greek (Rum), and Jewish communities. They are here not just to share a meal, but to share their heritage.
A Menu of Coexistence Under Chef Elif’s expert guidance, visitors will embark on a unique culinary journey, preparing and tasting a magnificent spread of traditional mezzes:
- Armenian Mezzes:
- Topik: A traditional chickpea-based mezze flavored with caramelized onions, currants, pine nuts, cinnamon, and tahini, typically shaped into small spheres and served cold.
- Çerkez Tavuğu (Circassian Chicken): Tender shredded chicken combined with ground walnuts, garlic, and rich spices, beautifully garnished with chili-infused olive oil.
- Greek (Rum) Mezzes:
- Fava: A smooth, velvety purée made from dried fava beans, olive oil, lemon, dill, and onion—perfectly paired with crusty bread.
- Tarama: A creamy fish roe spread blended with breadcrumbs, lemon juice, and olive oil.
- Dolmadakia: Grape leaves delicately stuffed with rice, fresh herbs, pine nuts, currants, olive oil, and lemon.

- Pırasa Köftesi (Leek Fritters): Delicate patties made from leeks, breadcrumbs, eggs, and spices, fried to a crisp golden brown.
- Fasulye Pilaki: White beans gently stewed in tomato sauce, olive oil, carrots, garlic, and onions.
- Traditional Turkish Mezzes:
- Haydari: Thick, strained yogurt blended with fresh dill, garlic, and mint.
- Muhammara: A rich, mildly spicy spread crafted from red bell peppers, walnuts, garlic, pomegranate molasses, and breadcrumbs.
Accompaniments: The feast is complemented by fresh Turkish bread, simit, lavash, local olives, artisanal cheeses, and a curated selection of fine Turkish wines.
The Storytelling: A Tapestry of Joy and Sorrow As the cooking concludes and everyone gathers around the table overlooking the shimmering Bosphorus, the true soul of the evening unfolds.
Through Chef Elif’s eloquent storytelling—complemented by the personal reflections of the three guest business leaders—the profound, positive impacts of the Armenian, Greek, and Jewish cultures on Turkey are brought to life. Elif speaks passionately about how these communities shaped the architecture, trade, arts, and culinary identity of the region. She paints a vivid picture of the Ottoman Empire up until the 19th century, detailing how it embraced this diversity, creating a thriving, multicultural sanctuary where neighbors of different faiths shared recipes, music, and daily life over garden walls. These are the joyful memories, the golden eras of coexistence that built the foundation of modern Istanbul.
Yet, the conversation remains remarkably authentic and deeply human. With grace and somber respect, Elif’s narrative does not shy away from the past’s shadows. She gives voice to the “not so happy” memories—the complex, painful chapters of history, the ruptures, and the shared sorrows that these communities endured. It is a poignant, honest reflection on loss and hardship.
Ultimately, however, it is a testament to resilience. By exploring both the light and the dark chapters of history while breaking bread together, this dinner transforms from a simple culinary class into a powerful, living message of unity, healing, and enduring friendship.

Day 3 From Europe to Asia An Intercontinental Journey of Empires and Flavors
Morning: The Imperial Epicenter (Topkapı Palace) Your journey begins on the historic peninsula of Europe, stepping through the monumental gates of Topkapı Palace. This is not merely a palace visit; it is an immersive dive into the beating heart of the Ottoman Empire. Through masterful historical storytelling, your guide will resurrect the voices of sultans, viziers, and concubines who walked these very courtyards. You will learn how this specific piece of land served as the command center for an empire that stretched across three continents. As you wander through the intricate pavilions, the lush royal gardens, and the silent, tiled corridors of the Harem, the narrative will focus on the empire’s strategic brilliance—how the Ottomans controlled the vital waters dividing Europe and Asia. The climax of this palace visit is the majestic Fourth Courtyard, where guests will stand at the marble terraces looking out over the Bosphorus, gazing directly at the Asian continent they are about to cross.
Midday: The Sapphire Crossing & Whispers of the Bosphorus (Private Cruise)
Leaving the ancient walls behind, the transition from land to water is seamless. Guests will be escorted to the shore to board a private, elegantly appointed luxury boat. As the ropes are cast off, this private cruise offers a front-row seat to the architectural and emotional timeline of the city.
Gliding over the sapphire waters, the guide will draw their attention to the magnificent shores. A profound moment arises as the boat passes the grand, European-style façade of Dolmabahçe Palace. Here, the storytelling takes a deeply poignant turn. Guests will learn how this opulent structure served as the final seat of the last Ottoman Sultans, and more significantly, as the sorrowful setting for the passing of the great Mustafa Kemal Atatürk, the revered founder of the modern Turkish Republic.
As the journey continues past the stunning wooden waterfront mansions (Yalıs) that dot the shoreline, the guide will share the melancholic, hidden histories of the prominent families who once lived within their walls—captivating tales of lost fortunes, shifting eras, and bittersweet memories. To ensure these stories stay with them long after the journey ends, each guest will be thoughtfully gifted an English edition of renowned curator and author Şerif Yenen’s book, detailing the fascinating history and secrets of the Bosphorus Yalıs.
Afternoon: A Sensory Awakening on the Asian Shore (Street Food Safari) The boat docks gracefully on the Asian side—the Anatolian soul of the city. Stepping off the boat, the atmosphere shifts instantly from the hushed reverence of the European peninsula to the vibrant, authentic, and pulsating energy of Asian Istanbul. Here, guests will embark on a curated street food safari. Navigating the colorful, aromatic alleyways, they will taste the city like true locals. The culinary storytelling takes over: biting into freshly made lahmacun (crispy Turkish flatbread) straight from a wood-fired oven, sampling midye dolma (mussels stuffed with aromatic spiced rice, generously squeezed with lemon), and savoring the iconic flavors of perfectly grilled meats or vibrant mezes from bustling market stalls. It is a loud, joyful, and sensory-rich celebration of Anatolian culinary heritage, grounding the morning’s royal history in the everyday heartbeat of the people.
Late Afternoon : The Golden Bridge and The Intercontinental Rite of Passage As the afternoon light softens into a golden hue, guests will board a luxury vehicle for the final leg of the journey: returning to Europe via the iconic Bosphorus Suspension Bridge. Suspended high above the waters they sailed earlier, the drive offers a breathtaking, panoramic view of the Istanbul skyline, where ancient minarets pierce the modern cityscape.
As the vehicle crosses the invisible line separating the two continents, a special ceremonial moment occurs. The guide will present each guest with a beautifully crafted, personalized “Intercontinental Traveler Certificate.” This elegant document officially commemorates their journey of crossing from Asia back to Europe in a single day—a playful yet meaningful token of their unique passage between worlds. The day concludes not just with full stomachs and a camera full of photos, but with the profound realization that they have successfully navigated the crossroads of human civilization.

Day 5 Bodrum The Freedom to Explore
Pedaling Through History or Discovering Secret Local Life
Option 1: The Heraklia E-Bike Adventure
(Pedaling Through the Playground of the Gods) For those seeking an active immersion into history and nature, this full-day electric bike journey—running from 09:00 to 16:00—offers an exhilarating escape. While the route has a “Hard” difficulty level, guests will be equipped with Carraro Kifuka model E-Bikes. The electric pedal-assist mechanism allows riders to comfortably cover more ground and see more sights using less physical force.
The journey centers around Mount Latmos (Beşparmak), characterized by its striking 550 million-year-old rock formations. The ancient traveler Herodotus of Halicarnassus famously described this mesmerizing landscape as the “playground of the children of the gods”. Riding with ease along the coastal track of Lake Bafa, guests can watch beautiful migratory birds, including flamingos and pelicans, thriving in their natural habitat.
This trail also uncovers 8,000 years of hidden history. The experience includes a short walk among Neolithic rock formations and a rare chance to observe 8,000-year-old Hittite hieroglyphs. Riders will then use the performance of their E-bikes to explore the magnificent ruins of the ancient port of Heraklia, nestled at the foothills of the Latmos mountains.
The adventure is paired with an exclusive, authentic gastronomic experience. Guests will taste regional specialties, including:
- Eel specific to Lake Bafa.
- Şevketi Bostan (a local thistle) cooked in a clay pot with meat.
- Roasted regional herbs such as nettle and radish greens.
- Cold-pressed, high-polyphenol olive oil sourced from centuries-old local olive trees.
Option 2: The Hidden Village, Garova Gastronomy & Vineyard Trail
For those who wish to discover that the Aegean is not only about turquoise bays but also home to a thousand-year-old heritage hidden in its inland villages, this journey is for you. This path takes us deep into the Karaova region, a place world-renowned for its olives, sheep, lush vineyards, and intricate hand-woven carpets.
Our exploration begins with a charming stop at a local market to feel the authentic pulse of the region. From there, we follow the ancient footsteps of the Lelegs to visit a unique open-air art museum, where we will observe the striking works of the renowned sculptor Ender Güzey.
As we immerse ourselves in the heart of village life, you will have the rare chance to witness the fascinating process of natural root dyeing for traditional Turkish carpets. Soon after, we become guests at a family farm led by a true “Hanımağa”—the respected female head of the household. Here, you will see olive oil being produced not with modern machinery, but with techniques dating back thousands of years, hearing the story of this liquid gold directly from the strong women who craft it.
As the day begins to soften, our route ascends to the summit of the mountains, to a place known as the “Secret Tuscany” of Bodrum. This vineyard is celebrated as the most beautiful spot in the region to watch the sunset. While the air cools, we will toast with award-winning local Zinfandel wine and savor handmade natural goat cheese paired with local olives.
The grand finale of the evening is a culinary ritual: a whole kid (oğlak) slow-roasted over an open wood fire on a traditional spit. Accompanied by a variety of local Aegean mezes and the profound silence of the ancient hills, this dinner is more than a meal—it is an encounter with the soul, history, and heartfelt hospitality of the region.

Day 6 Bodrum /Miletus / Selçuk/ VINIFERA EFESUS OMG
From Ancient Oracles to the Heart of the Vineyard
Morning: The Birthplace of Philosophy (Miletus) Leaving Bodrum behind, we travel north to the ancient city of Miletus. This was once a powerful maritime empire and the intellectual capital of the ancient world. Here, the first sparks of Western philosophy and science were ignited by iconic thinkers like Thales and Anaximander. As you stand within the colossal 15,000-seat theater, you can almost hear the echoes of the crowds that once gathered at this legendary harbor city. We will wander through the grand Faustina Baths, exceptionally well-preserved thermal complexes built for the Empress Faustina, and visualize the bustling life of the city’s ancient agora.
Midday: The Whispers of Apollo (Didyma) Our journey continues to Didyma, following the “Sacred Way” once walked by ancient pilgrims. Didyma was not a city, but a sacred sanctuary dedicated to Apollo, housing one of the most significant oracle centers of antiquity. The Temple of Apollo is breathtaking in scale; its massive, towering columns—some of the largest in the Greek world—surround a mystical inner courtyard. Your guide will share the enigmatic stories of the priestesses who fasted and performed secret rituals to deliver the prophecies of the gods to kings and generals who sought divine guidance before battle.
Late Afternoon: Harvest and Heritage at Vinifera Ephesus Upon arriving in Selçuk, we enter the serene world of Vinifera Ephesus (Yedi Bilgeler). This elegant wine estate is a true sanctuary where the Mediterranean spirit meets the art of viticulture.
We will be welcomed by the passionate woman who owns and manages the estate. She will personally lead us through the sprawling vineyards, sharing the secrets of the local soil and the philosophy behind their wine production. Together, we will walk the rows of vines and experience the seasonal joy of picking fresh grapes straight from the branch.
Evening: A Culinary Celebration Under the Vines Before dinner, we gather in the estate’s warm and inviting kitchen for an interactive cooking class. Under expert guidance, you will learn to prepare traditional Aegean dishes using the freshest local ingredients.
The day culminates in a magical dinner set directly beneath the canopy of the grapevines. It is a moment of pure connection—to the land, to history, and to the exquisite, living flavors of the region.

Day 7 Selcuk / Ephesus / Şirince
Echoes of Antiquity and the Sweetness of Şirince
Morning: Walking the Marble Streets of Ephesus After a restful night, we step out to experience the crown jewel of antiquity: the glorious ancient city of Ephesus. This is not merely an archaeological site; it is one of the most immaculately preserved Roman cities in the Mediterranean, serving once as the bustling capital of the Roman Province of Asia.
Entering through the upper Magnesian Gate, you will literally walk in the footsteps of emperors, merchants, and philosophers. The journey takes you gently downhill along original, sun-baked marble pavements. As you stroll down the magnificent Curetes Street, the history of the city unfolds before your eyes. Your guide will bring the ruins to life, pointing out the intricate mosaics of the terraced houses where the Roman elite lived, the impressive Temple of Hadrian with its Medusa carvings, and the ancient public baths.
The climax of this walk is the breathtaking reveal of the Library of Celsus. With its two-story façade of elegant columns and statues symbolizing wisdom and virtue, it is a masterpiece of Roman architecture and a testament to the city’s intellectual wealth. Just a short walk from the library, the monumental Great Theatre emerges. Carved directly into the side of Mt. Pion, this colossal structure once seated 25,000 spectators. Standing at the center of the stage, you can almost hear the roar of the crowds from gladiator battles and feel the historic weight of the very place where St. Paul once stood to preach to the Ephesians.
Afternoon: A Nostalgic Retreat to Şirince Village Leaving the monumental marble columns of Ephesus behind, we wind our way up into the lush, pine-scented hills to discover a completely different kind of magic: the picturesque village of Şirince (meaning “Pretty”).
Şirince is a perfectly preserved synthesis of Turkish and Greek culture, a legacy of the population exchange of the 1920s. As you step off the vehicle, you are greeted by the enchanting sight of traditional, whitewashed stone houses with red-tiled roofs and dark wooden shutters, cascading down the hillside like a painting.
The afternoon is dedicated to leisurely exploration and sensory delights. You will wander through narrow, winding cobblestone alleys, where friendly locals sell handmade lace, lavender sachets, and organic olive oil. The village is most famous for its vibrant fruit wines. We will visit a local, rustic wine cellar to enjoy a private tasting session of Şirince’s signature creations—wines crafted from local peaches, cherries, melons, and blackberries.
You will have free time to sip traditional Turkish coffee heated on hot sand at a quiet courtyard cafe, browse the artisan boutiques, and simply soak in the incredibly peaceful, nostalgic atmosphere of a village where time seems to have beautifully stood still.
Community Experience Efesium Selcuk
Tucked into the everyday life of Selcuk just beyond the monumental stones of Ephesus lies a quieter story one shaped not by emperors or temples but by hands memory and community
As the group enters Efesium they step into a space created by the Selcuk Municipality to support local women artisans and preserve traditional skills that might otherwise fade in the shadow of mass tourism
Shelves and tables are filled with handmade textiles scarves bags jewelry and small crafted objects each produced locally using techniques passed down through generations
A local host introduces the project explaining how Efesium was founded as a social initiative rather than a commercial shop
The goal is simple but powerful to create sustainable income for women in the region while keeping traditional craftsmanship alive within daily life
As guests browse and shop they are not purchasing anonymous souvenirs
Each item represents hours of handwork and a direct contribution to a household and a neighborhood
Income from sales supports women who balance craft with family responsibilities offering financial independence dignity and long term stability
The experience becomes a moment of exchange rather than transaction
Questions are asked stories are shared and the distance between visitor and community narrows
Guests gain insight into how cultural heritage survives not only in archaeological sites but in living hands and contemporary lives
By choosing to shop here the group actively supports
local women producers
community based economic development
the preservation of regional craft traditions
and a tourism model rooted in respect and reciprocity
Leaving Efesium guests carry more than objects with them
They carry a tangible connection to Selcuk and the knowledge that their presence has contributed directly to the well being of the community they have visited.

Day 8: Izmir/Ankara/ Hitite/Cappadoce
Journey to the Dawn of Empires: From the Hittite Capital to Magical Cappadocia
Morning Upon arrival to Ankara Airport Departure from the Modern Capital Our journey begins in Ankara, leaving the modern cityscape behind as we head east into the heart of the Anatolian steppe. Our destination is Boğazkale, the epicenter of one of the ancient world’s most powerful and mysterious superpowers: The Hittite Empire.
Mid-Day: Unveiling Hattusa, The City of a Thousand Gods (UNESCO World Heritage Site) As we arrive at the ruins of Hattusa, we step back over 3,000 years in time. This was the capital of the great Hittites, the fierce rivals of ancient Egypt who signed the Treaty of Kadesh, the world’s first recorded peace treaty. Here, we will deeply explore the monumental remnants of this Bronze Age superpower:
- The Great Temple (Büyük Tapınak): We begin at the largest structure in the city, dedicated to the Storm God of Hatti and the Sun Goddess of Arinna. Walking through its massive foundation stones, you will discover the mysterious, perfectly polished block of green nephrite stone, believed to have had profound religious significance.
- The Lion Gate (Aslanlı Kapı): As we trace the imposing ancient city walls, we are greeted by two magnificent, roaring lions carved into the stone—ancient guardians meant to ward off evil spirits from the city.
- Yerkapı and The Sphinx Gate (Sfenksli Kapı): An absolute architectural marvel. We will walk through a 71-meter-long, dark stone tunnel (postern) built directly beneath a massive artificial pyramid-like ramp. Emerging on the other side, we view the Sphinx Gate, a testament to the Hittites’ engineering genius and their connections with Egyptian art.
- The King’s Gate (Kral Kapısı): Adorned with a striking high-relief of a warrior god, this gate showcases the incredible artistic detail the Hittites achieved in stone carving.
The Sacred Rock Sanctuary: Yazılıkaya Just outside the main city walls lies Yazılıkaya, the most sacred open-air temple of the Hittite Empire. Hidden within natural rock galleries, this site served as the spiritual heart of the capital.
- Chamber A: Here, you will witness breathtaking rock reliefs depicting a grand procession of the Hittite pantheon—dozens of gods and goddesses marching to meet in the center.
- Chamber B: A narrower, more intimate gallery, believed to be a memorial chapel for a Hittite king. It features the hauntingly beautiful and incredibly well-preserved relief of the “Twelve Gods of the Underworld” carrying sickle-shaped swords.
Late Afternoon: The Road to the Lunar Landscape After a day immersed in the monumental legacy of the Bronze Age, we depart from the Hittite heartland and drive southward. The vast Anatolian plains gradually transform as we approach our evening destination.
Evening: Arrival in Cappadocia As the sun begins to set, we arrive in Cappadocia. The landscape dramatically shifts into a surreal, lunar-like panorama of towering fairy chimneys and ancient cave dwellings glowing in the twilight. We check into our hotel, resting up for tomorrow’s exploration of this otherworldly region.

Morning: Descending into Darkness
Our exploration begins at the breathtaking Göreme Valley, where the iconic “fairy chimneys” dot the landscape. Next, we descend into the Derinkuyu Underground City. This is an architectural marvel of survival. Carved deep into the earth by ancient civilizations to hide from invaders, guests will navigate through its fascinating multi-level network of deep cisterns, kitchens, wineries, and ingenious ventilation shafts.
Evening: Sunset Picnic and Cave Dining As the late afternoon light turns the volcanic valleys into shades of gold and crimson, we will host an elegant, private Sunset Picnic against the backdrop of the fairy chimneys. The day concludes with our first Cappadocian dinner, served in the atmospheric, stone-carved restaurant of our cave hotel.

Morning: Valleys and Underground Wonders Our second day in Cappadocia delves deeper into its heritage. We begin with the Zelve Open-Air Museum, walking through its incredible cave dwellings and ancient rock-cut monasteries. We then visit the Kaymaklı Underground City, another spectacular subterranean labyrinth that offers a different architectural perspective from Derinkuyu.
Midday: The Farm Experience & Lunch For lunch, we offer a truly immersive, hands-on experience. We will visit a local, working farm where guests will roll up their sleeves and actually help with light farm work—touching the soil, harvesting vegetables, and connecting with the land. This effort is rewarded with a rustic, incredibly fresh lunch prepared right on the farm using the very ingredients they just saw harvested.
Afternoon: Artisans and Aromas The afternoon is a blend of art and nature:
- Ceramic Workshop: We visit a traditional pottery workshop to see how the red clay from the nearby river is transformed into art, and guests will have a chance to try the potter’s wheel themselves.
- The Jeep Journey: We embark on a scenic Jeep Journey. (This is specifically designed as a peaceful, nature-focused exploration of hidden, hard-to-reach valleys, not a rugged or wild safari).
- Lavender Garden & Perfume Workshop: We make a fragrant stop at a beautiful lavender garden. Surrounded by purple blooms, guests will participate in an exclusive workshop to distill and create their very own personalized perfume to take home.
- Optional Activity: For those seeking a moment of tranquility, a peaceful, Venetian-style Gondola Ride on the gentle waters of the Kızılırmak (Red River) is available.
Evening: “From the Land to the Table” Dinner
